To Die For Blueberry Muffins

 Oh yes.  This recipe has been hanging on my fridge for quite a while.  So long, I know longer remember where I copied it from.  They are called "To Die For Blueberry Muffins" and they live up to their name!


 The recipe made just a dozen and they way they were being wolfed down this afternoon makes me think I better double the recipe next time.


 See what I mean?


 Here is the recipe!  Held up on the fridge for the last few weeks with my magnet from Vee!  It used to be held up by an ad for a pizza place!  This is much nicer.


Is the magnet cute?  I LOVE it!  Vee had a give away and then decided to give all her commentors a magnet!  Hurray!

Here is the recipe so you all can die for them too!

1 1/2 cups of flour
3/4 cups of sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup of oil (I use olive oil)
1 egg
1/3 cup of milk (I used a tad more)
1 cup fresh blueberries (I used fresh one that I had tossed in the freezer. Not the canned ones)

Mix all the ingredients, saving the blueberries for last.  Fold them in, fill your muffin cups up put the streusel topping on them and bake!

Streusel Topping - 
1/2 cup white sugar
1/3 cup flour
1 1/2 tsp cinnamon
1/4 cup of butter cubed (to work into the topping)
Mix together, I used my fingers to work the butter into the dry mixture.  Sprinkle on top of muffins.

Bake at 400 degrees for 20-25 minutes!  Excellent!

Yum! We had a blueberry day here too...blueberry upside-down cake prepared for a lunch guest.

Isn't everything better with a streusel topping? :-)
