How I Make Dinner Work For The Whole Family, While I Eat On Plan (progress photos)

 I made a family favorite last night - oven bbq chicken and biscuits, with green beans.

Super easy meal, cook any kind of chicken in the oven with bbq sauce, when the chickens done, remove the chicken from the pan, put the biscuits in the sauce in the pan and bake until done.  You can sprinkle some cheese on top of them too, if you like.  Easy peasy.




This meal works for me, except for the biscuit, so I made two chedder herb biscuits for me.  I use on plan flours (low carb.  My recipe calls for THM Baking Blend).

I try to do this when cooking so that I do not have to make two different meals.  If I make tacos or fajitas, or enchiladas, all I do is sub a low carb tortilla for mine.  If I make beef and rice, I keep the beef and gravy separate from the rice, and have mine over zucchini or green beans.  I don't really mine.  

I can eat sweet potatoes either fries, baked, or roasted and we all love them, so I rarely make regular potatoes at all.  If we have hamburgers I eat two patties, piled up with all my favorite toppings, onions, tomatoes, pickles, lettuce, and condiments, no bun.  I'll make sweet potato fries and eat some for a healthy crossover meal.  That just meals I have a higher amount of carbs in my higher fat meal.  It won't aid weight loss, but it doesn't add fat back on either!

Usually, I grill chicken when we have sweet potatoes, and that makes it doable for me!

Most of us love a good salad, so we easily all eat fajita chicken salad, or Big Mac salad, 

Last night I had on plan chocolate pudding (the recipe was for a no bake pie but I just did the pudding part).  It was awesome!  

I love eating great real food, my body loves it too.  My weight loss is still in a stall - I have been learning still about putting proper meals together - and I am slowly seeing the scale heading down.  But regardless of that, I am 50 pounds or so thinner than when my daughter Lindsay got married two years ago.

Yesterday was their anniversary and lots of photo memories were shared on FB.  Wow.  The difference is astonishing.  I needed to see that!



                      Oh my hair!  Its as fine as baby hair and it was humid and hot that day!

I have more weight to lose and recently I'm realizing I need a lot of toning.  I'm needing to get into strength training too, and work on flexibility.

This has been quite a journey for me.  I'm thankful for it - even for the 5 month stall, because I've learned so much, and I've been learning to seek Him for everything.

  2. I don't know about all the particulars, but you look terrific! Toning and strength training...yes, we all need to be doing something toward those goals. I need to walk and maybe I can start again soon once this latest mess is over.

  3. Well Yay! I think that as we get older we MUST incorporate a time where we work to maintain the body we have. Not as much for weight loss but to ensure throughout our years we still can function and get about. I think you are doing fantastic and a great inspiration!

  6. I am not doing a specific diet plan per se, but I have been cutting out carbs, sugars and flour, which can make meal planning difficult. I've learned that I can eat mostly green on my plate with a tiny bit of what the rest of the family is eating, and still lose weight. I like your ideas that you shared as well! Congrats on the wt loss, and your pictures are lovely! :)

  7. 50 lbs is amazing! So what plan are you doing exactly? I had a hysterectomy a little over a year ago and the pounds are piling on. Makes me feel terrible about myself because this hasn't ever been a problem. Ugh.
