Eating From Our Garden...

Yesterday we harvested more lettuce, a few sweet 100's, and two lovely yellow squash.  It is so exciting to use what you are growing in your garden for dinner!

I made chicken and pasta, using one of the squash, and we had a lovely salad using the lettuce.  The sweet 100's never made it to the table! They are such a yummy snack!

The recipe for Chicken and Pasta is simple;

In a frying pan, melt some butter and cook some chicken that has been cut up or you could use tenderloins.  While this is cooking you need to cook your pasta of choice.  I like to use either angel hair pasta or ziti.  Add yellow squash when the chicken is almost finished cooking and cook it until is is soft.   When the chicken is done cooking add a container of sour cream and about 8 ounces of grated parmesan cheese or I like to use an Italian blend of cheeses.  When it is all melted together in a wonderful gooey mess, mix with your choice of cooked pasta, sprinkle parsley over the top and voila! It is ready.  Note: When the chicken is done cooking there should be some butter in the pan still, if not add a bit more, this helps the sauce!

I should mention that we harvested some flat leafed parsley yesterday too, and used that to sprinkle on the top of our pasta.  We are drying some as well.

All it took really was the planting of some seeds.  God did all the rest, brought the sunshine and  heat, brought the rain...result?  Food for your family.

That is very thrilling to me!
