Cottage Supper


In the spring and summer I really like light easy meals. Grilled chicken, burgers, salads of all kinds, the sort of meal that is easy to cook, but everyone loves.

Tonight we had BLT's. Yum.



 I piled all the fixings onto a darling platter (it belongs to Rachel), 


 I put mine onto a low carb tortilla,


Everyone else gets toasted bread.

So easy and delicious!

Off course they look great on my Pioneer Woman plates!

I sometimes get into a cooking rut during the summer. Salads are great, although Ron is not as much a fan . . . unless we're talking Pioneer Woman's Cheeseburger Salad. He gets enthused about that! We also like to eat seafood in the summer, so we'll have steamed shrimp or crab cakes a couple of times. Oh, and corn-on-the-cob. It wouldn't be summer without that!

It's been a while since we have had BLT's. I think I'll pop that into this week's menu!

Yes, we like light meals in the summer also!!! I love BLT's and I haven't done them in long time. Grill cheese has been something we have been enjoying and chicken salad.

Move over, I'll sit right down with you. BLTs are some of my favorite things in all the world and I think I'd really like it served your way in the low carb tortilla. Also, Cheryl has that wonderful Cheeseburger Salad that I love in the summertime. It is dated July 10, 2012 so you can see that I have been enjoying it for years. It's found under her Salad Tuesdays series.

Love me a good BLT! I would really like it in a tortilla like you, as well. We get the Mission brand low carb tortillas and they are delicious!

We love BLTs here, too. I need to add them to next week's menu. Last night I made tacos. It turned cooler here today so I'm taking advantage of it and making lemon chicken orzo soup. There are not a lot of cool days expected before late September!

My favorite summertime meal is "Salada russa". It's a kind of potato salad, but with more ingredients. It's delicious!

Looks delicious! We tend to eat a lot of main-dish salads in the summer. It's cool and rainy here right now, though, so soup doesn't sound bad and I am making (meatless) fajita rice bowls tonight. A new recipe I found on someone's blog.
