Easy Summer Meals

 I always love to hear what people are cooking and eating at their homes, in the different seasons, so I thought I'd share what we've been eating.

Lindsay's homegrown tomatoes!

Last night I made BLT's for dinner, with the homegrown tomatoes that Lindsay gave me from her garden! Such an easy summer meal that everyone likes. Well, Kyle just makes bacon sandwiches, but that's another story! Ha!

Speaking of Kyle, today he is 16! What a blessing he is to our family. Loving, kind, helpful, hardworking, thoughtful. He's a boon companion. We are grateful to have him in our lives.

Another easy meal is to grill chicken, slice it up and serve it in a big salad. I make a marinade from red wine vinegar, a little oil, salt, pepper, chili powder, cumin, and a dash of oregano for the chicken. It makes the chicken taste great. I serve with my homemade ranch dressing. Sometimes during peach season I will toss some sliced peaches onto my salad as well! It's delicious.

Of course, there's always burgers for grilling, but we love to grill chicken patties and serve them on a bun with catalina dressing and a pineapple ring! Very tasty.

Sometimes, I saute chicken sausages with onions, then add two cans of tomatoes that have green chilis in them, add a bag of frozen mixed veg, and a bag of cauliflower rice. It's a quick and simple meal, and for the guys I usually make some brown rice that they throw this mixture on. I just eat it as is!

I know people who make their own pizzas and cook them on the outdoor grill! You could do this even with a ready to bake pizza. At Aldi they are around $6.00 so this is an easy and inexpensive meal!

Kyle loves fish and chips, so sometimes we throw wild caught, beer battered cod that we buy at Aldi, into the oven and cook it with some 'chips.' It is a quick and simple meal, and he can make this dinner by himself. Win-win!

Has he ever tried Bacon and Peanut Butter sandwiches???? Our oldest Grandson loves them!!!! -smile-

Yesterday and today, the same as you. A friend gifted us a big bag of tomatoes so we have eaten BLTs for two days in a row. Delicious. We've grilled sirloin burgers and tonight plan to grill sliced squash. So yummy with seasonings and grated parm.
