Pancakes

This morning I made pancakes for breakfast.  I don't always cook breakfast and usually pancakes are a Sunday evening meal, but a friend gave us this terrific mix for Blueberry Pancakes by Christina Maser

The kids loved them.  (Tim was at work)  I can't eat them since I am doing the Trim Healthy Mama eating plan, so I made myself on plan pancakes.

They are really yummy too.

Here is the recipe -

1 cup oatmeal
1 cup egg whites
1 cup cottage cheese
1 teaspoons baking powder
dash vanilla
2-3 tsp sweetener

This makes about 6 pancakes.  I can eat three of them and this allows me to have 3 in my fridge for another meal during the week.

  1. I like this recipe you are sharing here; healthy ingredients. Oatmeal and cottage cheese make it healthy. I avoid white flour and sugar so this one is a good one.

  2. Do you put anything on them? It must be challenging many times to stick with your plan. You're doing it so well!

  3. We are doing THM also! Good for you. How is it going? Do you always fix two meals, one THM and one for the family? I am trying to fix one meal with extra dishes for the children, sometimes it works well, other times we have to fix two entire meals..I say we, since Rose and Joe take up quite a bit of the cooking lately. :-) The THM pancakes look better than I thought, I will have to give them a try.
