Mini Frittatas

 


I'm always looking for an easy way to provide a good breakfast to my early risers, who have to head out the door for work before I get up in the mornings.

I've had this recipe saved on my THM - Breakfasts Pinterest board for some time now and decided to make them last evening.

There are lots of variations of this recipe and I used just ham and cheese, but these were easy to make.

You can find the recipe {here.} They will keep in the fridge for 3 days according to the recipe, but they will not last that long here at my house! Next time I'll make a double batch!

I'd love to hear any go to recipes you have for easy, healthy breakfasts!

I'm afraid to admit that breakfast is a fend-for-yourself affair around here. I will occasionally make a double batch of baked oatmeal which can easily be reheated on subsequent days. But "occasionally" is as good as it gets, so I am no help with ideas!
